Trail Tofu

Turns out I've been making this every other week all summer, and I've modified it with much better results. So if you think you'd like something that's not as sweet, keeps better, and not as salty, please visit my version 2.0 Trail Tofu at my journal.

My "trails" are urban not wilderness, but where ever you're going, this easy recipe makes a good portable food for traveling, where finding high-protein gluten-free can be tiresome. This recipe does include white & brown sugars (starred) but it's not baking. I'm not familiar with dry vegan sweeteners, but if they exist, they'd work.

There are three steps, with a lot of time in between:
  • Squeeze water out of tofu to make room for marinade: prep 0:10 wait 4:00 hr
  • Slice & Marinate: prep 0:10 wait overnight
  • Dehydrate: prep 0:10 cook 3:00 hrs

    I am an avid reader of the comm but I don't think I've posted yet! I intermittently love to cook, but am certainly no gourmet.

    I have printed off two of the three recipes listed under the tofu tag and would love to see more, or recs for tofu cookbooks.

    I'm very interested in using it more.

    So I just made eggplant parmesan for my roommates and remembered how tasty my recipe is (I have yet to have someone not love it) and how healthy it is for eggplant parmesan, so I thought I'd post it here. I think it's modified from something I read in a cookbook once, and I'm trying to guess my measurements, since I just throw things together, but here goes:

    At a family reunion-type thing last weekend, I ended up in charge of the vegetarian part of dinner (everyone else had grilled steak.) So I improvised some grilled tofu. I figured you can't go too far wrong with a bit of balsamic vinegar and olive oil.
