This is really a mash-up of two recipes, with the ultimate aim of providing Sufficient Nutrients in a single meal. The first is Jack Monroe's Spinach & lentil daal, from their second book; the second recipe is the Epicurious Indian spiced eggplant recipe. Both have been customised by me, for me. (This means they are white girl versions of indian food. Caveat lector)

I'm going primal, so instead of doing wonderful things to potatoes, rice or pasta, I need to think of more wonderful things to do to meat and veg.

So I just made eggplant parmesan for my roommates and remembered how tasty my recipe is (I have yet to have someone not love it) and how healthy it is for eggplant parmesan, so I thought I'd post it here. I think it's modified from something I read in a cookbook once, and I'm trying to guess my measurements, since I just throw things together, but here goes:
