I got this idea from a Gwyneth Paltrow cookbook, and while I doubt my Publix pita bread would meet with her approval, it's a really good idea. I can think of all sorts of modifications. Next time if I feel like getting fancy, I may try adding some shredded chicken and spinach.

Pecan-cinnamon soft cookies

Quick, easy, moist cookies adapted from a double-chocolate recipe from the West Wind Pony Club Cookbook.

Makes 30-36 cookies.

Preheat oven to 375°F and lightly grease two cookie sheets.

Cream together:

2/3 cup vegetable shortening
1 1/2 cups brown sugar

Add and mix vigorously:

1 Tbsp water
1 tsp vanilla extract
2 eggs

Sift together in a separate bowl:

1 cup whole wheat flour
1 cup all-purpose white flour
1/4 tsp baking soda
1/2 tsp salt
1 Tbsp ground cinnamon

Mix dry ingredients into wet a bit at a time, stirring well.

Add:

1 cup pecan pieces

Drop 2" balls into cookie sheets, leaving 2" spaces between cookies.

Bake 9 minutes… cookies will still be soft and a bit shiny when done. Wait maybe 5 minutes then transfer with a thin spatula or other thin lifter to wire rack.

"Recipe" for what I just did:

One Le Creuset 4 qt soup pot
Turn to medium-high heat
2 tablespoons olive oil
Dump in chopped up onion, celery, and carrots (my grocery store sells these in a nice package)
Stir around and let them hang out with the oil for a while (5 minutes? Ish?)
Smoked paprika and mudflats
Add two chicken breasts, chopped small
One 32 ounce thing of turkey broth
One tablespoon chicken better than boullion
Add season salt and lemon pepper
Cover and let cook on medium heat for the next 30 minutes.

Meanwhile, make your gnocchi according to package. (In this gluten-free household, we use CoraBella's gluten free gnocchi. A lot.)

As soon as the gnocchi and the soup are both done, drain the gnocchi and add it to the soup. Mix well, serve.

From start to us finishing up eating, this took less than an hour.

Low-Spoon Almost-Instant High-Protein Meal Idea

This is less a recipe to make on its own as a meal idea to be made for when you're batch cooking in the slow cooker or stove top or oven, and are browning huge amounts of mince (ground meat) in the morning or around noon and are noticing you need to eat but also need to finish the prep for the batch cooking DAMMIT!

This meal idea is low-spoon, almost-instant, high-protein, doesn't dirty any more dishes except for a fork, requires only 2 EGGS in additional ingredients, and is pretty much guaranteed to fix your hunger pangs within 5 minutes, give or take.

Chocolate fudge sauce / fondue

Courtesy of the Family Circle Kids' Cookbook lo these many moons ago:

150 grams of chocolate (usually dark), chopped
400 grams condensed milk
100 grams white marshmallows, diced into small bits

Microwave the chocolate for 1 min on medium & stir. Add condensed milk. Zap for another minute & stir. Add marshmallows. Continue zapping & stirring until it's all smooth.

Now, recipe says to serve hot or cold on ice-cream. I usually (read: at parties in my teens) serve with marshmallows and fruit, as a fondue or dipping sauce.

Coleslaw - almost but not quite :D

So I was serving quiche for dinner this evening and decided to make some coleslaw to go with it. It's ages since I've made coleslaw myself despite the fact that I far prefer it to the shop bought stuff which, for my taste, is always far too drippy and smothered with way too much mayonnaise.

I thought I would share my pseudo-coleslaw with you and see if anyone has any suggestions for the next batch. I've not included quantities because it's basically an 'as much as you feel like' kind of recipe - nothing is going to go drastically wrong if you use different quantities.

My ingredients

White cabbage
Red onion
Raw mushroom
Carrots (I picked some Chantenay ones which are supposed to be a little sweeter than the average)
Dried apricots
Mayonnaise

I diced everything (except the mayonnaise!) threw it in a bowl and mixed it up and then added enough mayo to coat but not drown the veg. And the nice thing is there's enough to go on lunch tomorrow. Today I didn't add them, but I also sometimes throw in a few chopped fresh chives.

I like adding the apricots for just that occasional bite of something a little sweeter. I know the shop bought ones sometimes include pineapple or sultanas, which is what made me begin to think about what else could go in. So does anyone have any other suggestions of things that they add to coleslaw for just that hint of unusual.

Curried Chickpeas and Onions

15 ounce can chickpeas (garbanzos), drained, rinsed
1 medium yellow onion, chopped
8 ounce can no-salt-added tomato sauce
1 Tbsp curry powder
1 tsp cumin
1/4 tsp cayenne pepper or to taste (if you have wussy tastebuds like mine you'll want to start with less)

Anti-Ramen Noodle Soup

For lunch today, my roommate ate one of those cardboard containers of instant beef ramen. Less than a dollar for the entire crate! I took one look at his meal and decided I didn't want to turn myself into dried meat from the ridiculous salt content.

Pasta in a Greek style no-cook tomato sauce

The Turkish grocery on my street is having the most delicious vine-ripened tomatoes this year and I've been working my way happily through all the tomato recipes in my repertoire lately. I've been doing this one for years already and was quite pleased to see almost the same recipe on Kalyn's Kitchen the other day.

Onion Dill Yogurt Dip

I think I've finally gotten the proportions right for this, so I wanted to share. The base is all yogurt, unlike some of the ones out there that want both yogurt and sour cream, which is not so good when I'm trying to up my yogurt intake.

Polenta-crusted mackerel

Okay, did everyone know about this apart from me?

Take one egg and some quick-cook polenta. Beat the egg in a bowl, and pour the polenta on a plate. Dip the mackerel in the egg, roll it in the polenta to coat it, and pan-fry.

Get delicious crispy crunchy coating.

Served with fennel and kohl-rabi, sliced into sticks and thrown into the pan for 30 seconds after the fish was done.

Catfish with mirepoix

My husband had the idea of cooking fish over mirepoix, and we got carrots in our last farmshare, so we decided to give it a try. We were hoping to use tilapia, but when we got to the market the only tilapia they had was from China, so we went with U.S.-sourced catfish instead. It would be better with tilapia, I think.

Chorizo and pasta hot pot

Serves 4

Ingredients:
100g chorizo
2 red onions
390g chopped tomatoes
120g conchigliette (soup pasta)
2tbsp olive oil
1 vegetable stock cube
Salt and pepper
Crusty white bread

This was dinner tonight, made from assorted bits and pieces from the fridge that had accumulated.  It turned out very nice.  I will probably change a couple of things the next time I make it.  See notes at the end.
